Molecular Mechanism

CGTase catalyzes the conversion of starch into cyclodextrins through a few primary activities:

  • Cyclization Reaction: CGTase cleaves a segment of a linear α-1,4-glucan chain and connects the ends to form a circular structure, i.e., a cyclodextrin.
  • Coupling Reaction: It can also transfer a cyclodextrin ring onto a different linear α-1,4-glucan chain.
  • Disproportionation Reaction: This involves the transfer of a segment of one starch molecule onto another.
  • Hydrolysis Reaction: Though not its primary function, CGTase can also hydrolyze α-1,4 glycosidic bonds in starch.
